We all know that it’s important to include fresh produce and other foods as part of a healthy diet. But things happen -- spoiled food, a skipped grocery store trip, or just an unexpectedly bare-shelved fridge.
When that happens and dinnertime looms, leave DoorDash out of it and head to your well-stocked pantry, where jars, cans, bags, and boxes await your creative touch. Here are four ideas; hopefully they will inspire your own creations!
Can of chick peas + small jar of sun-dried tomatoes or roasted red peppers + a jar or can of chopped artichoke hearts + olive oil, white wine (optional) lemon, dried oregano = Mediterranean Salad
Can of black beans + medium jar of salsa + can of corn + 1 cup (measured dry) quinoa + chili seasoning = Quinoa Corn Chili
1 lb penne or similar pasta + 2 cans tuna + 3 cups jarred marinara sauce + 1 small container pitted Kalamata olives + dried basil + crushed red pepper or hot sauce = Spicy Tuna Puttanesca
1 quart vegetable stock or broth + 1 cup red or yellow lentils + 1 tbsp jarred or tube garlic (or 2 tsp garlic powder) + 1 tsp each cumin and turmeric + salt and lemon juice to taste = Middle Eastern Lentil Soup
